The restaurant features a beautiful counter crafted from a single slab of Yoshino cypress, surrounded by natural earthen walls that create a warm and tranquil atmosphere.
While Kobe is world-renowned for its beef, the region is also home to an abundance of exceptional seafood known to those in the know. At Sushi Sugisaki, two experienced sushi chefs — one with more than 30 years of experience and the other a certified sake sommelier and owner-chef — create an omakase sushi experience centered on the finest seasonal seafood from Hyogo Prefecture, including the renowned waters of Akashi and Awaji.

A little secret awaits in your first Oshibori hand towel.
We source our ingredients primarily from Hyogo Prefecture, including Awaji and Akashi, as well as from across Japan. One ingredient we highly recommend trying is the red sea urchin from Yura, which is only available for a limited time during the summer.
Alongside traditional techniques developed during the Edo period, when refrigeration was not yet available—such as vinegar curing, soy sauce marinating, and simmering—we also serve sushi featuring ingredients unique to Hyogo Prefecture.
As the seasons change, so does our menu, with the dishes we serve evolving little by little throughout the year. We strive every day to create an experience that leaves you excited to discover what kind of sushi awaits you this month, and to look forward to encountering new flavors with every visit.
For our sushi rice, we blend red vinegar and rice vinegar to create a flavor that pairs perfectly with the ingredients of Hyogo Prefecture. We do not use any sugar. Our rice is carefully selected in consultation with a certified rice specialist, taking into consideration the season and the quality of each year's harvest.
Alongside the renowned sake of Hyogo Prefecture, we offer a carefully curated selection of rare and exceptional sake from across Japan. We invite you to enjoy a lineup thoughtfully chosen to complement and harmonize with our sushi.
Our sake sommelier will recommend the perfect sake to accompany your experience, taking into consideration the season, the composition of the course, and your personal preferences. Please savor the exquisite harmony between sushi, with its ever-changing character from one piece to the next, and carefully selected Japanese sake.
In addition to sake, we offer champagne and beer, perfect for a celebratory toast, as well as a selection of increasingly rare Japanese whiskies, wines, and shochu.

Regarding Reservation Times
We do not operate on a fixed, simultaneous seating schedule. However, in order to provide all our guests with a relaxed dining experience and to ensure that our omakase course is served at its best, we primarily offer reservations at 6:00 PM, 6:30 PM, and 8:30 PM.
Please note that we may not be able to accommodate requests for reservation times outside of these hours. We sincerely appreciate your understanding and cooperation.

Fragrance
The aroma of sushi is an important part of the dining experience. We kindly ask that you refrain from wearing perfume or using strongly scented hair products, fabric softeners, or other fragrances.
Watches & Accessories
Watches and accessories may scratch or damage the counter. We kindly ask that you remove them and keep them safely in your bag while dining.
Dress Code
We do not have a strict dress code. However, as many of our guests visit us for special occasions such as celebrations and business dinners, we kindly recommend smart casual attire.
Photography
Please ask our staff before taking photographs of the dishes. We kindly ask that you refrain from taking photographs that include the restaurant interior or other guests, as well as from using flash photography.
Cancellations
We prepare our ingredients according to the number of guests in each reservation in order to minimize food waste. Please notify us of any cancellations or changes to the number of guests at least three days in advance.
For same-day cancellations or no-shows, 100% of the course price will be charged.
Reservation Times
We do not operate on a fixed, simultaneous seating schedule. However, to allow as many guests as possible to enjoy a relaxed dining experience and to ensure that our omakase course is served in the best possible condition, we primarily offer reservations at 6:00 PM, 6:30 PM, and 8:30 PM.

Dining Pace
The course takes approximately two hours. We place great importance on serving each piece of sushi at the moment when it is at its best. We kindly ask that you enjoy each piece while it is freshly prepared for you.
Children
To maintain a calm and comfortable atmosphere for all our guests, we generally do not accommodate young children.
However, we are happy to accept reservations for children who are able to remain seated for approximately two hours and enjoy the full omakase course.
Children are also welcome for private bookings.
